Butterfly pig's head is known for its golden yellow color, rich and mellow flavor, deep red flesh, and juicy yet not greasy texture. It has become a favorite among food lovers due to its unique taste and appearance.
(1) **Material Selection**: Choose healthy pigs with no diseases or physical disabilities. The pig's head should be full-sized, of moderate size, with intact ears, nose, and mouth. Ensure the skin is clean and free from damage.
(2) **Ingredients**: For every 50 kg of fresh pig’s head meat, use 4 kg of salt, 50 grams of pepper, 50 grams of ginger, 50 grams of star anise, 150 grams of white wine, and 25 grams of sodium nitrite. Additional spices can be added based on preference.
(3) **Preparation**: Remove the internal organs and carefully scrape off the scalp, remaining hair, and hair roots. Rinse the pig’s head thoroughly with warm water at around 40°C to ensure cleanliness.
(4) **Pickling**: After washing and draining, coat the pig’s head evenly with the spice mixture. Place it in a container and marinate for 7–9 days. Make sure to turn the pig’s head once during the process so that all parts are evenly covered with the seasoning.
(5) **Shaping**: Once pickled, take the pig’s head out of the container and place it on a bamboo tray. Shape the scalp so that the left and right sides of the face and the tip of the nose form a “butterfly†shape, which gives the dish its signature look.
(6) **Coloring**: Apply sugar and spices separately to give the pig’s head a bright, waxy yellow color, enhancing both its visual appeal and flavor.
(7) **Roasting**: Place the colored pig’s head into a roasting chamber and cook for 48 hours. Start by maintaining a temperature of 40°C, then gradually increase it to 60°C, and finally reduce it back to 40°C. When the skin becomes shiny, waxy yellow, and the muscle turns red with a hint of white fat, and the aroma is strong and pleasant, the pig’s head is ready. Remove it from the oven and let it cool before serving.
