In winter, many farmers tend to store sweet potatoes and regular potatoes together. However, this practice is not scientifically sound and can lead to spoilage or reduced quality.
Sweet potatoes prefer a cool but not freezing environment, ideally between 12°C and 15°C. If the temperature drops below 9°C, they risk frost damage, which can cause them to rot or become hard. On the other hand, regular potatoes require cooler storage—between 1°C and 5°C. If stored above 7°C, they spoil more quickly, and if the temperature goes below 0°C, they may freeze and rot.
Additionally, when potatoes are kept above 5°C, their skin begins to shrink, especially once the buds on the eyes start to sprout. Once sprouting occurs, a toxic compound called solanine can develop around the sprouts. This toxin is harmful to both humans and animals. Therefore, it's important to remove the flesh around the sprouts before eating. If the sprouts turn dark or grow excessively, the potato should be discarded.
When storing regular potatoes, keeping them between 10°C and 15°C helps maintain their starch content, but they shouldn't be stored for too long—ideally no more than two months. To ensure the best quality and safety, sweet potatoes and regular potatoes should be stored separately, as their ideal conditions differ significantly. This prevents cross-contamination, reduces the risk of spoilage, and preserves the nutritional value of both crops.
